Hey everyone! So I’ve been meaning to try out this recipe for some time now, ever since I pinned it to my pinterest account. Being a recent pescetarian, I’ve been on a look-out for more veggie-friendly options and adding quinoa to any recipe is always a great idea. Especially when this power grain is packed with all 9 essential amino acids of a protein–awesome.
1 small onion
1 medium size tomato
1 cup of quinoa
1 can of sweet corn
1 can of black bean
1/2 packet of tofu seasoning mix (found at Hmart)
1 wheat bun
1 t of greek yogurt as condiment
Sautee the onions and tomatoes together until tender. Then mix in the corn and black beans until cooked.
Cook 1 cup of quinoa with 1 cup of water for 10 mins and let rest. Then add 1 cup of the quinoa and 1 cup of the black bean mixture into a processor and pulse to blend. Transfer into a bowl and add the rest of the quinoa and black bean mixture along with half of the tofu seasoning mix packet.
Form the patties into round shape and lay in a greased pan. Bake in 350 degree oven for 20 minutes one side and then flip the patties over to bake for another 10 minutes.
Serve on bun and condiments of choice. Enjoy!
